I am running into several resources regarding elderberry toxicity. I am clear that the leaves and twigs are toxic. I have had folks tell me the berries must be cooked. I have made elderberry honey - without much heat and am now concerned I should have cooked them up first. Is there any reference to the toxicity of elderberry you can direct me to? Thank you, Katia

The seeds have some levels of toxicity, mostly causing nausea or vomiting due to the cyanide compounds. Heating or drying the berries reduces this. If you used the fresh berries and strained out the fruits there should not be much of an issue. I also question how well elderberry would extract into honey but that is another issue.
