For Amanda: Herbal vinegars

I want to make rosemary vinegar for gifts. I was looking up recipes, and several said to boil the vinegar before pouring on the rosemary, one even said to disinfect the rosemary with diluted bleach (yikes!) so that bacteria and molds don’t grow in it. Some said to sterilize the bottles you put it in, others said that’s not necessary. I wanted to use raw apple cider vinegar and don’t want to heat it. Your instructions didn’t say to do that, but for gift giving what is your opinion? I would be making it at least a month before Christmas.

Both the vinegar itself and the rosemary have disinfecting and preservative properties. You're welcome to do those things if you want to, but it's absolutely not necessary.
