Wine pairings are sometimes suggested to accompany certain meals. I think this is to enhance taste rather than to aid nutrient absorption, with the possible exception of classic bitters and aperitifs. In your opinion, should water and other beverages be consumed separately from meals so stomach acid is not diluted? If so, what would be a reasonable time delay?

I do not think you need to separate liquids from meals, I would avoid drinking large quantities of cold liquids when eating. Small amounts of water, tea, wine, etc are fine with meals for most people. Just like it is not necessary to separate drinking the broth in soup from the solids, nor is it necessary to avoid drinking with meals.
