David, last class, you mentioned that ginger should be infused and not decocted. Can you please expand on that? Is the root ground or grated finely? Chinese culture decocts this is soups, at low and high doses. Is something lost in a decoction vs infusion. And would this apply to dry or fresh only? Thank you.
Ginger is full of heat-sensitive volatile oils, decocting decreases them, In China everything is decocted, whether it makes chemical sense or not. You can decoct fresh ginger, but dry powdered ginger should be infused.
